I would have to say Shadow of the Colossus has some of the best music if not the best ever put into a game it is simply beautiful and epic. Each soundtrack matches the battles perfectly and really capture the moment it fills you with emotion. The game truly is a masterpiece and if you have never played it or never listened to the music I'd say look up the opened way on YouTube and just listen for yourself I'm sure you'll fall in love with the music from that game.

Baldur's gate, return to ravenhearst and gray matter. Those games have a great soundtrack, but with a little effort I could've compiled a whole list. Casual games ( or hidden object games or whatever you like to call them) tend to have beautiful orchestral soundtracks as well.

Uncharted has some really good music too. That badass main theme and the "adventure" song and sounds during the game are very nice.
Also, every Nintendo game has a really funny and good songs. Mario, Zelda, Star Fox... all get stuck in the head.

Metal Gear Solid, I know Harry Gregson-Williams did some work on the series, just the way the music's and scenes blend together like watching a movie which is basically what Metal Gear Solid games are.

The most epic that I have heard would have to be in Legend of Zelda: OOT with Koji Kondo, but I do love Nobuo Uematsu'a work in FFVII and a more modern soundtrack is with Sonic Generations, I love the remixing!
Can't forget the music in Castlevania, so dark but yet so bloody catching at the same time!
