My favorite animes were Samurai Champloo, FLCL, Cowboy Bebop, Wolf's Rain, Neon Genesis Evangelion and Eden of the East. If you haven't seen any of these then you should watch them, although, I'm not sure what genre of anime you are into.
Also, if you want to see an interesting anime movie, watch Tekkon Kinkreet.

Zoid was about my one and only favorite anime, the Chaotic Century being the best of the different spinoffs. It was pretty good though it was canceled years ago and they haven't made anymore since.
Hellsing also seems to be good while I myself have yet to watch any episodes.
Another show is Black Cat which I've a couple times on the funimation.

Hm...if I had to take any one anime...I'd say Kirby Right Back At Ya! I honestly don't see it anymore, but the Japanese episodes are good enough and are actually better since they're not butchered a lot. You still get good music and dialogue, not to mention ALL of the episodes. Cursed FCC...
